Zero Food Waste with Young George & Ethos Deli & Dining Room Head Chef, Melissa Palinkas

Melissa Palinkas is the co-owner and award-winning Executive Chef of Perth restaurants Young George and Ethos Deli & Dining Room.

Her incredible cooking aside, she’s also a passionate advocate of sustainability in the hospitality industry, and her venues work hard to reduce their carbon footprint.

Adopting a “nose to tail” or “root to shoot” approach to cooking, Melissa actively reduces food waste by using every part of vegetables and meats, and also by using “imperfect” produce that may otherwise end up in landfill.

She sends her own crates to suppliers for filling, uses glass jars for kitchen storage, and serves her food with as little packaging as possible to reduce plastic use and wastage.

Melissa is leading the way for other Perth hospitality venues, by showcasing the possibilities for sustainability in commercial kitchens and restaurants, and we’re looking forward to Melissa’s presentation on 13th December, in the cellar at Young George!
